Let's talk about the food(s) I'm currently addicted to:
a) Hummus - I'm putting it on everything! Whether it belongs there or not. Crackers, snap peas, and carrots of course, but also sweet potatoes, in soups and even mixed with sauerkraut. I may have a problem.
b) DATES - I love them so much y'all. Like I want to marry them and make little date babies. They're that good.
Yes, I do have problems.
So...when I saw this recipe I got pretty excited. Not only does it have dates, but it's a healthy version of one of my favorite childhood treats: Dessert Pizza. You know what I'm talking about - sugar cookie crust, cool whip and cream cheese "sauce", then of course a ton of fruit which ultimately made it a "healthy" dessert, right? Rrrriiiiggghhhttt....
Maybe not.
This version? It really is healthy, and SO yummy!!!

I added chopped walnuts to the crust, which made it a little thicker. Also, the instructions say to let it chill in the fridge 2-3 hours. Of course I ate it immediately, but the next morning it was incredible. Guess that was supposed to be more than a suggestion. I can't tell you past that, because there wasn't really any left after breakfast.

Chopped walnuts sound like a great addition to the crust! I got a bag of California walnuts in the mail the other day from a company so I could totally try this. Hummus and dates rock! Do you combine them?
